The Restaurant

Well, your Rabbi has entered the first of two major projects associated with his culinary education. The first project is to come up with a restaurant concept in San Francisco. The school has worked with various other groups and companies in the Bay area in order to help us simulate how our restaurant will operate, target customers, etc.

As usual, this is a group project (which I've grown to truly detest), although I must say that in this case, it's far too much work for one person to accomplish in the given timeframe (we only have two weeks to do everything from pick a location, to project out a year's worth of sales). My group's concept is an upscale Scandinavian lunch place in the financial district of San Francisco (we tried to keep it simple), called The Börd Röøm (a pretty catchy name, I think - although not as bad as another team that's putting a restaurant called The Glory Hole into the Castro, which is a big gay neighbourhood in town). We're trying to play up the business people (who are our targeted customer base).

My designated role on this team is to be the team's accountant (I've been making jokes that it's the Jewish guy that always gets to work on the finances, but in reality, it's because I'm the best suited on the team). Thus far, I've developed a complete inventory of ingredients, and fully costed out all of the recipes that we're planning on serving. Today, I start working on getting our labour costs defined (schedules, etc.), our equipment schedules (for our heavy duty equipment, including a depreciation schedule), as well as a general income statement (profit & loss) that will ultimately tell me (once I project my sales) whether or not we've turned a profit. As such, I've been buried in Microsoft Excel all week and weekend.

All I've decided is that if I ever meet Bill Gates, I am going to kick him square in the nuts. I would publish a complete rant on microsoft, starting from a flawed business model to a culture of mediocrity, but it would take me more time than I have to give. In the meantime, I'm back to the computer to ultimately see what happens with this. One of these days I'll be back in the world of the living...
